Coconut Mojito

A Cooling Beverage for Summer Frozen Coconut Mojito

What’s not to love about coconut, pineapple and fresh mint?

Frozen Coconut MOJITO

Makes 1 drink


  • 2 oz. Rumhaven Rum
  • 1 ½ oz. simple syrup
  • 1 oz. coconut milk
  • 1 oz. sweet-and-sour mix


  • Black sea salt
  • Toasted coconut
  • 5 pineapple chunks
  • 5 mint leaves


  1. For cocktail, add ingredients to blender with ice; blend thoroughly.
  2. For garnish, stir together black sea salt and toasted coconut in a small bowl. Dip pineapple cubes in coconut-salt mixture, then add to drink with mint leaves. Enjoy!

Pineapple Marinade
Add a taste of the tropics to your meal with this easy marinade.


  • 1 cup shoyu or tamari
  • 2 cups pineapple juice
  • 1 tbsp sesame oil
  • ¼ cup sliced ginger
  • 2 garlic cloves
  • ¼ cup brown sugar


  • Blend all ingredients
  • Marinate steak overnight in the fridge
  • Cook steak as desired
